Pineapple Meatballs

Not everyday can be takeout, and frankly I'm quite glad for that. For the past two days, we've been having some good old fashioned home cooking, if only we could do this everyday...

Now one of the things mom loves making, is her pineapple meatballs with rice. I remember having them even way back when I was kid living in Edmonton. They taste really good, and they're fairly easy to make, rather than go on about how awesome they are, I'll tell you guys how to make them instead.



First off, you need a pack of ground beef, breadcrumbs, some spices (use whichever you like, it doesn't matter), one egg, some shredded mozzarella, some pineapple, oil, green peppers, sugar, vinegar, flour, soya sauce, and rice.

First off, mix the meat, spice, and breadcrumbs together in a bowl. Make sure it's well mixed so that it the spice and breadcrumbs have spread all over the meat. With that mixed well, add one egg and mix that together with the meat. Now take a handful of mozzarella, and mix that into your meat, spreading it around evenly.

Take the meat and shape it into balls. You can probably get about 6 or 7 per pack of meat. Now throw them into a lightly oiled frying pan and fry them on medium heat. They should take 15 - 20 minutes.

As the meatballs cook, make some rice whichever you like your rice. Make enough so that the rice covers each persons plate, and gives a nice bed for the meatballs.

Now, the final thing we have to make, is the sauce which covers the meatballs. It's kind of hard to give accurate directions because the recipe is done in a way where we just know how much to use by looking at it.

Chop up your green pepper and pineapple into small pieces. Mix those into some soya sauce, vinegar, and sugar. To thicken the sauce, add some flour until it has a nice consistency. If you want it to be sweet, add more pineapple, if sour, add more vinegar. When this has a nice consistency not quite as thick as maple syrup, pour it onto the cooked meatballs, and let it simmer.

Now just put a layer of rice on the plates, and serve the meatballs on top. I find three meatballs are good for an adult, you may want more or less depending on how you eat.
